Bake up something sweet for your something sweet!

Valentine's Day is all about showing those you love just how much they mean to you.  This year, I am not only going all out on the heart themed cookies, but I am paring them with the most delicious vanilla cupcake.  
Once again, my friend Mindy Cohr has generously shared with me (and you) her go to cupcake recipe. Boy is it ever delicious!

VANILLA CUPCAKES : 

1 and ⅓ cup all-purpose flour
1 and ¼ teaspoon baking powder
½ teaspoon salt
½ cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2/3 cup full fat sour cream

 

VANILLA BUTTERCREAM : 
1 1/2 cups unsalted butter, at room temperature
3 ¼ cups powdered sugar, sifted
2 teaspoon vanilla extract
2-3 tablespoons milk or cream
pinch of salt
DIRECTIONS : 
  1. Preheat oven to 350F. Line muffin tins with cupcake liners and set aside.
  2. In a large bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In the bowl of a stand mixer fitted with the paddle attachment (or in a large mixing bowl using a hand-held mixer), beat the butter and sugar until light and fluffy. Beat in the eggs one at a time, then the vanilla. Add in the sour cream and mix until fully combined.
  4. Slowly add the dry ingredients to the wet ingredients and mix until just combined, making sure not to over mix the batter.
  5. Scoop the batter into the cupcake liners, filling them a little over half way full.
  6. Bake at 350F for 18-22 minutes (rotating pans halfway through) or until a toothpick inserted into the center of the cupcake comes out clean.
  7. Remove from the oven and allow to cool for a 10 minutes. Remove all of the cupcakes from the pan and transfer to a wire rack to cool completely. 
  8. While they cool, make the buttercream. In a stand mixer fitted with the whisk attachment or using an electric hand mixer whip the butter until light and fluffy for about 5 minutes on medium/high speed.
  9. Once the butter is pale in color and light slowly add in the confectioners' sugar one spoon at a time on medium speed. Let the sugar fully incorporate before adding in more sugar.
  10. Add the vanilla extract, vanilla bean seeds, salt and cream.
  11. Whip on high speed for another 3-4 minutes until very light, creamy, and fluffy.
  12. Once cupcakes are cool, pipe or spread vanilla buttercream on top and serve!
